Open Power Tools from the apps search bar.  System Administrator role is required.

Click on the Objects tab and search for the Object you wish to search

Click to open the object

Scroll down to the Workflows section

Click on the Stages tab. For the workflow step you are interested in, click on the pencil next to the action such as Approval.

You can view the role against the Person Responsible
